- Beat the cream cheese in a medium bowl until light and fluffy.
- Gradually add the sweetened condensed milk, mint extract, and food coloring, then beat until smooth.
- Gently fold in the Cool Whip with a rubber spatula.
- Fold in the miniature chocolate pieces.
- Spoon the mixture into the graham cracker crust.
- Place the pie in the freezer until hardened, at least 8 hours or overnight.
- Remove from freezer 5 minutes before serving.
- Garnish with additional chocolate pieces and mint leaves if desired.
