Mint-Wine Lamb Chops

Ingredients

  • 8 lamb-rib or loin chops (about 1-inch thick, about 2 lb.)
  • 2 Tbsp. dry white wine or apple juice
  • 2 Tbsp. honey
  • 1 tsp. chopped fresh mint leaves or 1/4 tsp. dried mint leaves
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Set oven on broil; trim fat from chops.
  2. Mix white wine or apple juice, honey, mint leaves, salt, and pepper to make the marinade.
  3. Brush chops with the wine mixture.
  4. Place lamb on rack in broiler pan.
  5. Broil 3 to 4 inches from heat for about 4 minutes or until browned.
  6. Brush the chops again with the wine mixture.
  7. Turn chops and brush the other side with the marinade.
  8. Broil for an additional 5 to 7 minutes for medium doneness (160°F).
