Ingredients

  • 1 lb. fresh green beans
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped onion
  • 1 tablespoon vegetable or olive oil
  • 2 medium tomatoes, peeled and chopped
  • 1/4 to 1/2 teaspoon dried whole basil
  • 1/4 teaspoon dried whole rosemary
  • 1/2 to 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Remove strings from green beans, wash thoroughly, and cut into 1 1/2 inch pieces. Cook in boiling salted water for 15 to 20 minutes until crisp tender. Drain and set aside.
  2. Saute chopped bell pepper and onion in hot oil until tender. Add peeled and chopped tomatoes, dried basil, dried rosemary, salt, and pepper. Mix well, then add the cooked green beans and heat thoroughly.
