Ingredients

  • 1 Tbsp. butter or margarine
  • 1 c. diced onion
  • 2 Tbsp. chopped fresh mint or 1 tsp. mint flakes
  • 2 tsp. oil
  • 4 c. thin zucchini sticks

Instructions

  1. Combine butter and oil in a large skillet and heat until the butter melts.
  2. Add the diced onion and sauté over high heat for about 1 minute.
  3. Stir in the zucchini sticks.
  4. Reduce heat to low and cover the skillet.
  5. Cook, stirring occasionally, until the zucchini is tender, about 3 to 4 minutes.
  6. Stir in the chopped mint and cook an additional 30 seconds.
