Instructions

  2. Combine vanilla bean seeds, the split bean, and skim milk; bring to a boil.
  3. Remove from heat and let stand for 30 minutes. Discard the vanilla bean.
  4. Add sugar, gelatin, peppermint flavoring, and salt; let stand for 1 minute.
  5. Cook over low heat for 5 minutes or until the gelatin dissolves completely.
  6. Allow the mixture to cool completely.
  7. Stir in plain low-fat yogurt and light-colored corn syrup.
  8. Pour the mixture into a bowl; cover and chill for 8 hours.
  9. Using a 1-quart hand turned or 1/2-gallon electric freezer, freeze according to manufacturer's instructions.
