Ingredients

  • 1 medium eggplant
  • 2 medium onions
  • 1/4 cup butter
  • 1 cup milk
  • 3/4 cup strong cheese, cubed
  • 2 slightly beaten eggs
  • 1 teaspoon baking powder
  • 1/4 pound Ritz crackers

Instructions

  1. Peel and cut the eggplant into chunks.
  2. Add sliced onions to the eggplant.
  3. Cook in salted water until tender.
  4. Drain the vegetables and add butter.
  5. While the vegetables are cooking, prepare and combine the other ingredients.
  6. Add the cooked vegetables to the mixture and mix thoroughly.
  7. Pour the mixture into a baking dish.
  8. Bake at 325°F (163°C) for about 1 hour until puffed and golden.
  9. Serve as a main dish, enjoying the savory, souffle-like texture.
