Mixed-Pepper Compote

Ingredients

  • 4 tablespoons olive oil
  • 4 seeded, sliced bell peppers
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 9 chopped garlic cloves
  • 2 tablespoons tomato paste

Instructions

  1. Warm 4 Tbsp. olive oil in a skillet over medium heat. Add 4 seeded, sliced bell peppers; saute for 1 minute. Add 1 tsp. each chili powder and Italian seasoning and 1/2 tsp. salt; saute for 5 minutes. Add 9 chopped garlic cloves, cover, reduce heat and cook for 12 minutes, stirring, until peppers are soft. Add 2 Tbsp. tomato paste, stir well and cook for 2 minutes.
