Ingredients

  • 1/2 tsp kosher salt
  • 3/4 tsp sage
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary

Instructions

  1. In a small bowl, combine kosher salt, sage, allspice, black pepper, and dried rosemary.
  2. Coat the split, skinned Cornish hens with olive oil, then rub with the herb mixture thoroughly.
  3. Cover the hens with plastic wrap and refrigerate for 3 hours to marinate.
  4. Preheat the broiler.
  5. Set the oven rack 8 inches from the heat source.
  6. Arrange the hens on a broiler pan and broil for 8 minutes.
  7. Turn the hens over and broil for an additional 7 to 8 minutes until cooked through.
