Ingredients

  • 6 ears of corn
  • 1 whole onion, chopped
  • 1 whole bell pepper, chopped
  • 2 tomatoes, cut up
  • 3 Tbsp. butter

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Scrape corn off the ears of corn.
  3. Layer the ingredients in the pot: first the corn, then the chopped bell pepper, tomatoes, and remaining ingredients.
  4. Turn the heat down to low and cook for 2 hours, stirring often.
  5. Optionally, use 1 can of Ro-Tel tomatoes instead of fresh tomatoes for a spicier version.
