Mock Fruit Cake
Ingredients
Instructions
- Beat eggs, oil, sugar and vanilla until thick and foamy.
- Add zucchini, coconut, nuts, fruit cake mix and raisins.
- Sift dry ingredients together and add to mixture.
- Divide batter equally between 2 greased and floured pans or use a round tube pan.
- Bake for 1 hour at 350°.
- Cool in pans for 10 minutes.
