Mock Fruit Cake

Ingredients

  • 3 eggs
  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 c. unpeeled zucchini, shredded
  • 1 c. fruit cake mix
  • 3 c. flour
  • 1/2 c. coconut
  • 1/2 c. chopped nuts
  • 1 c. raisins
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg

Instructions

  1. Beat eggs, oil, sugar and vanilla until thick and foamy.
  2. Add zucchini, coconut, nuts, fruit cake mix and raisins.
  3. Sift dry ingredients together and add to mixture.
  4. Divide batter equally between 2 greased and floured pans or use a round tube pan.
  5. Bake for 1 hour at 350°.
  6. Cool in pans for 10 minutes.
