Heidi Potatoes are tender baked potatoes sliced into French fry shapes, soaked in sugar water, then baked with herbs and butter for a flavorful, crispy side dish perfect for gatherings.

Ingredients

  • 4 Idaho baked potatoes
  • butter or margarine
  • chives
  • parsley
  • garlic powder or garlic salt
  • 1/3 cup sugar
  • 2 cups water

Instructions

  1. Slice a thin slab off each side of the baked potatoes.
  2. Slice the slabs into thin French fry shapes.
  3. Cut the remaining potato blocks in half, then into quarters and eighths to match fry size.
  4. Place 2 cups of water in a bowl and add 1/3 cup sugar.
  5. Soak the cut potato pieces in the sugar water for 1 hour or more.
  6. Pour off the water and place the soaked potatoes in a flat baking dish.
  7. Melt butter or margarine in a small pan.
  8. Add chopped chives, parsley, and garlic powder or garlic salt to the melted butter.
  9. Pour the herb butter mixture over the potatoes.
  10. Bake in a preheated 350°F oven for 30 minutes or until done.
