- Heat oven to 375°F.
- Place butter and sugar in a medium-sized bowl and mix until blended.
- Stir in vanilla extract.
- In a second bowl, mix chopped pecans and all-purpose flour.
- Add the flour mixture to the butter mixture and mix until well blended.
- Shape a rounded teaspoonful of dough into small "mice" about thumb size.
- Place about one inch apart on an ungreased baking sheet.
- Bake for 13 to 15 minutes until cookies are lightly browned.
- Remove from oven and cool slightly.
- While cookies are still warm, roll in confectioners sugar to coat thoroughly.
- Place on a wire cake rack to cool completely.
- Store in an airtight container.
