Ingredients

  • 1/2 c. butter
  • 1 Tbsp. granulated sugar
  • 1 1/2 tsp. vanilla extract
  • 1/2 c. finely chopped pecans
  • 1 c. all-purpose flour
  • confectioners sugar

Instructions

  1. Heat oven to 375°F.
  2. Place butter and sugar in a medium-sized bowl and mix until blended.
  3. Stir in vanilla extract.
  4. In a second bowl, mix chopped pecans and all-purpose flour.
  5. Add the flour mixture to the butter mixture and mix until well blended.
  6. Shape a rounded teaspoonful of dough into small "mice" about thumb size.
  7. Place about one inch apart on an ungreased baking sheet.
  8. Bake for 13 to 15 minutes until cookies are lightly browned.
  9. Remove from oven and cool slightly.
  10. While cookies are still warm, roll in confectioners sugar to coat thoroughly.
  11. Place on a wire cake rack to cool completely.
  12. Store in an airtight container.
