Creamy and flavorful potato salad with mustard, pickles, and eggs, dressed in butter and milk, perfect for family gatherings, picnics, or casual dinners.

Ingredients

  • 10 to 12 potatoes
  • 2 Tbsp butter
  • 1/2 cup milk
  • 1/4 cup prepared mustard
  • 4 large lettuce leaves
  • 2 or 3 boiled eggs
  • 1 tsp salt
  • 1 jar midget pickles
  • 1 medium onion

Instructions

  1. Peel the potatoes, cut into cubes, and cook until tender.
  2. Drain the potatoes. Add butter while still hot. Mash the potatoes until smooth, gradually adding milk until reaching desired thickness.
  3. Add salt, prepared mustard, pickle juice, and chopped onion; mix well.
  4. Line a platter with lettuce leaves. Spoon the potato salad onto the leaves and shape into a rounded loaf.
  5. Cut the sweet pickles in half lengthwise.
  6. Slice the boiled eggs. Arrange the pickle halves and egg slices on top of the salad.
