Ingredients

  • 1/2 cup enriched cornmeal
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 5 eggs
  • 1/4 cup finely chopped onion
  • 1 (10 oz.) package frozen chopped broccoli, thawed and drained
  • 1/2 cup cottage cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie plate.
  2. In a bowl, combine cornmeal, flour, baking powder, and salt.
  3. Add milk, one slightly beaten egg, and chopped onion; mix well.
  4. Pour the batter into the prepared pie plate, spreading evenly.
  5. Bake for 10 minutes, then set aside.
  6. In a separate bowl, beat the remaining 4 eggs.
  7. Add thawed and drained chopped broccoli, shredded Cheddar, and Monterey Jack cheeses; mix well.
  8. Spoon the broccoli and cheese mixture evenly over the partially baked cornmeal base.
  9. Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean.
  10. Let stand for 5 minutes before serving.
