Three Cheese And Broccoli Pie

Ingredients
- 1/2 cup enriched cornmeal ⓘ
- 1/2 cup all-purpose flour ⓘ
- 2 teaspoons baking powder ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 cup milk ⓘ
- 5 eggs ⓘ
- 1/4 cup finely chopped onion ⓘ
- 1 (10 oz.) package frozen chopped broccoli, thawed and drained
- 1/2 cup cottage cheese ⓘ
- 1 cup shredded Cheddar cheese ⓘ
- 1 cup shredded Monterey Jack cheese ⓘ
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie plate.
- In a bowl, combine cornmeal, flour, baking powder, and salt.
- Add milk, one slightly beaten egg, and chopped onion; mix well.
- Pour the batter into the prepared pie plate, spreading evenly.
- Bake for 10 minutes, then set aside.
- In a separate bowl, beat the remaining 4 eggs.
- Add thawed and drained chopped broccoli, shredded Cheddar, and Monterey Jack cheeses; mix well.
- Spoon the broccoli and cheese mixture evenly over the partially baked cornmeal base.
- Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean.
- Let stand for 5 minutes before serving.
