Ingredients

  • 1 lb. lima beans
  • 1 onion, grated
  • 2 to 3 large carrots
  • 2 to 3 stalks celery
  • 3 Tbsp. butter
  • 2 cloves garlic, pressed
  • salt to taste
  • pepper to taste

Instructions

  1. Soak lima beans overnight or for 2 days.
  2. Grate the carrots and slice the celery.
  3. Place all ingredients in a crock-pot.
  4. Add water to cover the beans.
  5. Cook all day on low or until beans are tender.
  6. Add water as needed during cooking.
