Ingredients

  • 1 lb. pork liver (no beef)
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. sage
  • 1 c. cornmeal
  • 1/3 c. flour
  • grated onions (optional)

Instructions

  1. Cook liver until tender.
  2. Cool and crumble into small pieces. Bring to a boil and add sage.
  3. Reduce heat.
  4. Mix well 1 cup meal and 1/3 cup flour and add to liver.
  5. Cook slowly stirring constantly until mush thickens.
  6. Pour into a bowl and cool.
  7. Slice and flour each piece.
  8. Fry in hot oil.
