Ingredients

  • 2 1/2 cups chicken broth
  • 1 cup yellow cornmeal
  • 1/2 pound pork sausage
  • 1/2 teaspoon sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon savory

Instructions

  1. Blend cornmeal with 1 cup of chicken broth in a small container.
  2. Brown the sausage until crumbly in a skillet.
  3. Drain excess fat from the sausage.
  4. Add remaining chicken broth to the sausage and bring to a boil.
  5. Slowly stir in the cornmeal mixture, stirring constantly for about 10 to 15 minutes.
  6. Add sage, thyme, and savory, then reduce heat and continue stirring.
  7. Spoon the mixture into a 4 x 8-inch loaf pan.
  8. Cover and chill overnight or for at least 3 hours.
  9. Slice into 1/2-inch thick slices.
  10. Coat slices with flour and brown in butter before serving.
