Ingredients

  • 2 lb beef liver
  • 10 strips bacon
  • 1 cup flour
  • 1/2 teaspoon thyme
  • 1 teaspoon seasoning salt
  • 2/3 cup lemon juice
  • 5 green onions

Instructions

  1. Fry bacon in a skillet until crisp and drain, reserving the bacon grease.
  2. Mix flour, thyme, and seasoning salt in a bowl.
  3. Cut the beef liver into 1/2-inch strips.
  4. Dip the liver strips in lemon juice, then coat with the seasoned flour mixture.
  5. Fry the coated liver in the bacon grease until cooked through, adding a little cooking oil if needed.
  6. Sprinkle chopped green onions and crumbled bacon over the cooked liver.
  7. Serve hot.
