Mom's Mexican Mess is a hearty casserole combining seasoned meat, cheese, chilies, corn, and creamy soups, perfect for comforting family dinners and Mexican-inspired flavors.

Ingredients

  • 1 dozen flour tortillas
  • 1 can enchilada sauce
  • 1 small can Niblets corn
  • 1 lb. ground beef
  • 4 boneless chicken breasts
  • 1 small can green chilies
  • 1 can cream of mushroom soup

Instructions

  1. Heat tortillas in enchilada sauce in a medium saucepan.
  2. Line the bottom of a 9 x 13-inch casserole dish with the heated tortillas and sauce.
  3. Layer the ingredients in the following order: cooked meat (or chicken), half of the cheese, green chilies, corn, cream of mushroom soup, cream of chicken soup, and remaining cheese.
  4. Bake at 350°F (175°C) for 40 minutes until bubbly and heated through.
