Ingredients

  • 1 medium onion, chopped
  • 1 garlic clove, chopped
  • 1 lb. butter
  • 2 lb. chicken livers
  • 1/4 cup brandy
  • 1 pint whipping cream
  • salt
  • white pepper
  • 1/2 pureed truffle (optional)
  • 1/2 teaspoon thyme

Instructions

  1. Saute chopped onion and garlic in 1/2 pound of butter until softened.
  2. Add chicken livers and saute until lightly browned but still rare.
  3. Blend the mixture in batches, 1/3 at a time, until smooth.
  4. Add remaining 1/2 pound melted butter, brandy, whipping cream, salt, and white pepper; blend well.
  5. Strain the mixture through a fine sieve.
  6. Add pureed truffle, if desired.
  7. Pour into a 1 1/2-quart terrine.
  8. Chill and serve with crackers or French bread.
