Ingredients

  • 1 cup sifted all-purpose flour
  • 2 Tbsp granulated sugar
  • 1/2 cup soft butter
  • 1/8 tsp salt
  • 1 cup finely chopped pecans
  • 1 tsp vanilla extract
  • confectioners sugar

Instructions

  1. In a large bowl, combine all ingredients except confectioners sugar.
  2. Mix with hands until thoroughly blended. Refrigerate dough for 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Form dough into 1/4-inch balls.
  5. Place 1 inch apart on ungreased cookie sheets.
  6. Bake for 15 to 20 minutes or until set but not brown.
  7. Let stand for 1 minute, then remove to wire rack to cool partially.
  8. While still warm, roll in confectioners sugar.
  9. Cool completely, then re-roll in confectioners sugar just before serving.
