Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup flaked coconut
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup peanut butter
  • 2 tablespoons margarine or butter, softened
  • 1/2 cup milk
  • 1 egg

Instructions

  1. In a large mixer bowl, stir together flour, brown sugar, coconut, baking powder, and baking soda.
  2. Add peanut butter and softened margarine or butter.
  3. Beat on low speed of electric mixer just until crumbly.
  4. Set aside 1/2 cup of the mixture for topping.
  5. Add milk and egg to the remaining mixture and mix until combined.
  6. Pour batter into a greased baking dish.
  7. Sprinkle the reserved crumb mixture evenly over the top.
  8. Bake in a preheated oven at 350°F (175°C) for about 30 minutes or until a toothpick inserted in the center comes out clean.
