Ingredients

  • 1 c. white sugar
  • 1 c. vinegar
  • 1 c. water
  • cooked small beets

Instructions

  1. Bring the sugar, vinegar, and water to a boil for 4 or 5 minutes until the sugar dissolves.
  2. Put one teaspoon of salt in each quart jar; also, add a full teaspoon of pickling spice in each jar.
  3. Pour the boiling mixture over cooked beets (salt beets some while cooking) and seal the jars.
  4. Use small cooked beets for best results. Makes 2 quarts.
