- Bring the sugar, vinegar, and water to a boil for 4 or 5 minutes until the sugar dissolves.
- Put one teaspoon of salt in each quart jar; also, add a full teaspoon of pickling spice in each jar.
- Pour the boiling mixture over cooked beets (salt beets some while cooking) and seal the jars.
- Use small cooked beets for best results. Makes 2 quarts.
