Instructions
- Bring apple juice and water to a boil.
- Add dried beans and cook until almost tender, about 2 hours.
- Drain beans, saving liquid, and add all other ingredients except vegetables.
- Cover and bake in a 250°F oven for 2 to 3 hours.
- Uncover for the last 1/2 hour of baking and add chopped tomato or green pepper.
- If beans get dry, add some of the reserved bean liquid.
