Ingredients

  • 3/4 cup dried beans
  • 1 cup water
  • 1 cup apple juice
  • 1/4 teaspoon salt
  • 1 tablespoon molasses
  • 1/4 cup ketchup
  • 1/4 teaspoon vinegar
  • 1/4 teaspoon prepared mustard
  • 1/4 cup chopped tomato or green pepper

Instructions

  1. Bring apple juice and water to a boil.
  2. Add dried beans and cook until almost tender, about 2 hours.
  3. Drain beans, saving liquid, and add all other ingredients except vegetables.
  4. Cover and bake in a 250°F oven for 2 to 3 hours.
  5. Uncover for the last 1/2 hour of baking and add chopped tomato or green pepper.
  6. If beans get dry, add some of the reserved bean liquid.
