Ingredients

  • 4 Tbsp. soft margarine
  • 1/3 c. light corn syrup
  • 1 tsp. peppermint extract
  • 1/2 tsp. salt
  • 1 lb. box confectioners sugar

Instructions

  1. Mix the margarine, light corn syrup, peppermint extract, and salt together.
  2. Gradually add the confectioners sugar, mixing until smooth and stiff.
  3. Shape the mixture into balls.
  4. Dip a fork into additional sugar and flatten each ball.
  5. Dry the mints on waxed paper for 8 to 10 hours before storing in an airtight tin.
  6. Use paste food coloring to tint the mints if desired; do not use liquid food coloring.
