Ingredients

  • 1 lb ground veal or beef
  • 2 small eggs
  • Chopped parsley to taste
  • Pepper to taste
  • Garlic to taste
  • Basil to taste

Instructions

  1. Use large green olives with pits for this recipe.
  2. With a small paring knife, carefully remove the pit from each olive, keeping the olive intact.
  3. Form small balls of ground veal or beef seasoned with chopped parsley, pepper, garlic, and basil.
  4. Wrap each meat ball with a pitted olive, encasing the meat completely.
  5. Roll each stuffed olive in flour, then beaten eggs, and finally coat with bread crumbs (Italian seasoned or plain).
  6. Fry the breaded olives slowly over medium heat, turning to brown all sides evenly.
