Ingredients

  • 2 lb ground beef
  • 1 1/2 medium onions, diced
  • 15 oz can corn or peas, undrained
  • 6 servings instant mashed potatoes, prepared
  • 6 slices American cheese

Instructions

  1. Brown the ground beef in a skillet.
  2. Add diced onions to the skillet.
  3. Cook until onions are transparent.
  4. Pour off excess oil from the skillet.
  5. Spray a casserole dish with cooking spray or lightly oil it.
  6. Spoon the cooked beef and onions into the dish, then stir in the undrained corn or peas.
  7. Pat the mixture flat in the dish and spread the prepared mashed potatoes on top.
  8. Arrange American cheese slices on top of the mashed potatoes.
  9. Bake at 350°F for 15 to 20 minutes or until the cheese melts completely and browns.
  10. Remove from oven and serve.
