Ingredients

  • 1 lb. ground beef
  • 4 small carrots, sliced
  • 1 pkg. dry onion soup mix (1.2 oz.)
  • 6 oz. uncooked noodles (3 cups)
  • 1 can sliced, stewed tomatoes
  • 1 can whole kernel corn, drained (16 oz.)
  • 1 tsp. dried basil leaves
  • 1/8 tsp. pepper

Instructions

  1. In a large skillet or Dutch oven, brown the ground beef.
  2. Stir in carrots, 1 cup water, and onion soup mix.
  3. Cover and cook over low heat until carrots are almost tender, about 15 minutes.
  4. Stir in noodles, tomatoes, corn, 1 cup water, basil, and pepper.
  5. Bring to a boil.
  6. Cover and cook over medium-low heat until noodles and vegetables are tender, about 8 minutes, stirring several times. If needed, stir in 2 or 3 tablespoons of water to prevent sticking.
