Ingredients

  • 1 c. cake flour, sifted
  • 1 1/2 c. sugar, sifted
  • 10 egg whites
  • 7 egg yolks
  • 1 tsp. salt
  • 1 tsp. cream of tartar
  • 1 1/2 tsp. lemon extract

Instructions

  1. Prepare a 10-inch tube pan and set aside.
  2. Preheat the oven to the appropriate temperature (typically around 350°F / 175°C).
  3. In a large mixing bowl, sift the cake flour and half of the sugar together.
  4. In a separate bowl, beat the egg whites with salt and cream of tartar until stiff peaks form.
  5. Gradually add the remaining sugar to the egg whites and continue beating until glossy and stiff.
  6. In another bowl, beat the egg yolks with lemon extract until well combined.
  7. Gently fold the egg yolk mixture into the egg whites.
  8. Fold in the sifted flour and sugar mixture carefully, avoiding deflation.
  9. Pour the batter into the prepared tube pan.
  10. Bake for 60 to 65 minutes or until a toothpick inserted into the center comes out clean.
  11. Remove from oven and invert the pan to cool completely before removing the cake.
