Ingredients

  • 12 oz. angel hair pasta
  • 1 red pepper, chopped
  • 1/2 small red onion, chopped
  • 1/2 medium zucchini, chopped
  • 1 tsp. salt
  • 1 tsp. curry powder
  • 1 Tbsp. olive oil
  • 1/2 c. chicken broth
  • 1/4 c. seedless raisins (optional)

Instructions

  1. Cook pasta according to package. In large saucepan over medium heat, cook red pepper, onion, zucchini, salt and curry in hot oil for 3 minutes or until crisp-tender. Stir in broth. Bring to boil; boil for 1 minute or until slightly thickened. Drain pasta and add vegetable mixture with raisins.
