Ingredients

  • 2 lb. chuck (coarse grind)
  • 2 c. tomato juice
  • 2 oz. chili powder
  • 1 medium onion, chopped
  • 1/2 tsp. black pepper
  • salt to taste
  • 1/2 tsp. ground cumin
  • 2 small garlic cloves, chopped
  • 1/4 c. masa flour
  • 1/2 tsp. red pepper (optional)

Instructions

  1. Put the meat into a heavy skillet or cast-iron pot.
  2. Cook all the moisture out of the meat until it is slightly browned.
  3. Add tomato juice and water to achieve desired consistency.
  4. Simmer until the meat shows signs of tenderness.
  5. Add chili powder, chopped onion, black pepper, salt, ground cumin, and chopped garlic.
  6. Continue to cook until the meat is thoroughly tender.
