Mother's Icebox Rolls are soft, buttery yeast rolls with a slightly sweet flavor, perfect for family dinners, picnics, or special occasions. Easy to prepare in advance.

Ingredients

  • 1 cup cold water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 cup boiling water
  • 3/4 cup shortening
  • 2 eggs beaten
  • 2 cakes yeast dissolved in 1/4 cup warm water

Instructions

  1. Combine cold water, sugar, and salt in a mixing bowl.
  2. Add shortening to boiling water, then pour into the cold water mixture.
  3. Add beaten eggs and dissolved yeast cakes to the mixture.
  4. Add 3 heaping cups of sifted flour, beating well after each addition.
  5. Add 4 to 5 more cups of flour gradually, beating as you add each cup.
  6. Knead the dough for 5 to 10 minutes until smooth and elastic.
  7. Place the dough in the refrigerator to rise for at least several hours.
  8. Shape the dough into rolls and place in a warm area to rise until doubled in size.
  9. Bake at 400°F (204°C) until golden brown and done.
