Ingredients

  • 12 small hot red peppers
  • 10 large green peppers
  • 10 large red peppers
  • 6 large onions
  • 1 tsp. celery seed
  • 1 1/2 Tbsp. salt
  • 5 c. vinegar
  • 3 c. sugar

Instructions

  1. Grind the peppers and place in a large mixing bowl.
  2. Pour enough boiling water over the peppers to cover and let set for 10 minutes.
  3. Drain the peppers; add chopped onions and celery seed if using.
  4. In a large saucepan, boil vinegar, salt, and sugar together.
  5. Add the pepper-onion mixture to the boiling vinegar mixture and boil up well.
  6. Pour into jars and seal.
