Munching Peanut Brittle(Microwave)
A crunchy, sweet peanut brittle with rich caramelized sugar and roasted peanuts, perfect for satisfying snack cravings or sharing at gatherings.

- In a 1 1/2-quart casserole, stir together the sugar and syrup. Microwave on High 4 minutes.
- Stir in peanuts.
- Microwave on High 3 to 5 minutes, until light brown.
- Add butter and vanilla to the syrup.
- Blend well.
- Microwave on High 1 to 2 more minutes until the mixture is hot and the peanuts are browned.
- Add baking soda and stir until light and foamy.
- Pour mixture into a greased cookie sheet.
- Cool for 30 minutes to 1 hour.
- Break into pieces.
