Munching Peanut Brittle(Microwave)

Ingredients

  • 1 cup sugar
  • 1/2 cup white corn syrup
  • 1 cup roasted, salted peanuts
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

Instructions

  1. In a 1 1/2-quart casserole, stir together the sugar and syrup. Microwave on High 4 minutes.
  2. Stir in peanuts.
  3. Microwave on High 3 to 5 minutes, until light brown.
  4. Add butter and vanilla to the syrup.
  5. Blend well.
  6. Microwave on High 1 to 2 more minutes until the mixture is hot and the peanuts are browned.
  7. Add baking soda and stir until light and foamy.
  8. Pour mixture into a greased cookie sheet.
  9. Cool for 30 minutes to 1 hour.
  10. Break into pieces.
