Ingredients

  • 1 can mushroom soup
  • 1 Tbsp minced onion
  • 1 (4 lb) chuck beef roast

Instructions

  1. Combine mushroom soup and minced onion on heavy foil, about 24 x 18 inches.
  2. Roll the beef roast in the soup mixture to coat well, then wrap loosely, sealing the edges well.
  3. Place the foil-wrapped roast on a cookie sheet for easy handling.
  4. Bake in a 350°F (175°C) oven for 3 hours.
  5. Remove from oven; reset temperature control to broil.
  6. Slit the foil across the top and fold it back, being careful not to let gravy run out.
  7. Broil the roast for 5 minutes, or until the top is browned.
  8. Carve into 1/4-inch thick slices and serve with gravy from the foil package.
