- Combine mushroom soup and minced onion on heavy foil, about 24 x 18 inches.
- Roll the beef roast in the soup mixture to coat well, then wrap loosely, sealing the edges well.
- Place the foil-wrapped roast on a cookie sheet for easy handling.
- Bake in a 350°F (175°C) oven for 3 hours.
- Remove from oven; reset temperature control to broil.
- Slit the foil across the top and fold it back, being careful not to let gravy run out.
- Broil the roast for 5 minutes, or until the top is browned.
- Carve into 1/4-inch thick slices and serve with gravy from the foil package.
