Mussels Marinara

Ingredients

  • 1/3 cup extra virgin olive oil
  • 4 large cloves garlic
  • 36 mussels, scrubbed and debearded
  • 1 (35 oz.) can crushed Italian plum tomatoes
  • 1 tablespoon minced parsley
  • 1 tablespoon minced fresh oregano
  • Salt and pepper to taste

Instructions

  1. In a large flameproof casserole, heat the olive oil.
  2. Add the garlic and cook over moderate heat until lightly browned, about 3 to 5 minutes.
  3. Add the mussels, crushed tomatoes, minced parsley, and oregano.
  4. Bring to a boil, then reduce the heat to moderate.
  5. Cover and simmer, stirring occasionally, until the mussels open, about 5 to 7 minutes.
  6. Using a slotted spoon, transfer the mussels to soup bowls.
  7. Discard any mussels that do not open.
  8. Season the sauce with salt and pepper to taste.
  9. Ladle the sauce over the mussels and serve hot.
