Ingredients

  • 1/2 head iceberg lettuce
  • 1/2 head romaine lettuce
  • 2 or 3 tomatoes
  • 1 medium onion
  • 1 bell pepper
  • 1 cucumber
  • 1 cup calamata olives
  • 3 Tbsp. capers
  • 4 oz. Feta cheese

Instructions

  1. Make the dressing by whisking together 1/2 cup olive oil, 1/4 cup salad vinegar (part balsamic), salt, and pepper.
  2. Toss the torn lettuces, tomatoes, sliced onion, sliced bell pepper, sliced cucumber, sliced olives, and capers in a large bowl.
  3. Pour the dressing over the salad and toss again to evenly coat all ingredients.
  4. Top the salad with crumbled feta cheese before serving.
