Ingredients

  • 1/2 lb. ground beef or turkey
  • 1 green pepper, chopped
  • 11 oz. can nacho cheese soup
  • 1 1/4 cup skim milk
  • 1/2 cup frozen whole kernel corn
  • 1 medium tomato, chopped
  • 1 teaspoon dried minced onion

Instructions

  1. In a 2-quart microwave-safe casserole, crumble the ground meat.
  2. Add the chopped green pepper.
  3. Cook in microwave, covered, on High for 2 to 3 minutes until no pink remains in the meat, stirring once or twice. Drain off the fat.
  4. Stir in the nacho cheese soup, skim milk, frozen corn, chopped tomato, and dried minced onion.
  5. Cook, covered, on High for 7 to 10 minutes or until the chowder is heated through, stirring once.
