Ingredients

  • 1 loaf stale Italian bread
  • 1/2 stick butter
  • 2 cups water
  • 1 teaspoon salt
  • 2 eggs
  • 2 tablespoons fresh parsley
  • 1/2 cup grated Romano cheese

Instructions

  1. Cut the stale Italian bread into bite-sized cubes.
  2. Melt butter in a saucepan with water; add chopped parsley and grated Romano cheese.
  3. Bring the mixture to a rapid boil.
  4. Add the bread cubes and stir until the liquid is partially absorbed.
  5. Continue to heat slowly, allowing the bread to soak up flavors.
  6. Crack the eggs into the pot over the bread mixture.
  7. Stir well over low flame until the eggs are cooked and mixture is heated through.
  8. Serve hot with additional butter and cheese if desired.
