Creamy tomato lasagne roll-ups feature ricotta, spinach, and melted mozzarella, offering a satisfying, cheesy meal perfect for family dinners or entertaining guests.

Ingredients

  • 8 lasagne noodles (about 8 oz.)
  • 2 Tbsp. olive oil
  • 1/2 cup finely chopped onions
  • 1 3/4 cups stewed tomatoes
  • 3/4 cup tomato paste (6 oz.)
  • 1 3/4 cups ricotta cheese
  • 1 1/4 cups frozen chopped spinach, thawed and well drained
  • 1 cup shredded mozzarella cheese
  • 1 egg, slightly beaten
  • 2 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cook lasagne noodles according to package directions; drain and lay flat on foil to cool.
  2. Preheat oven to 350°F (175°C).
  3. In a skillet, heat olive oil over medium heat.
  4. Add chopped onions; cook, stirring frequently, until tender.
  5. Add stewed tomatoes and tomato paste to the skillet.
  6. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring to break up tomatoes.
  7. In a mixing bowl, combine ricotta cheese, thawed chopped spinach, egg, grated Parmesan cheese, salt, and pepper.
  8. Spread a layer of the tomato sauce on the bottom of a baking dish.
  9. Lay a lasagne noodle flat, spread with the ricotta mixture, then roll up.
  10. Place rolled lasagne seam-side down in the baking dish.
  11. Repeat with remaining noodles and filling.
  12. Top the roll-ups with remaining tomato sauce and shredded mozzarella cheese.
  13. Bake uncovered in the preheated oven for about 20 minutes, until cheese is bubbly and golden.
  14. Serve hot, garnished with additional Parmesan if desired.
