Tomato Lasagne Roll-Ups
Creamy tomato lasagne roll-ups feature ricotta, spinach, and melted mozzarella, offering a satisfying, cheesy meal perfect for family dinners or entertaining guests.
Ingredients
- 8 lasagne noodles (about 8 oz.) ⓘ
- 2 Tbsp. olive oil ⓘ
- 1/2 cup finely chopped onions ⓘ
- 1 3/4 cups stewed tomatoes ⓘ
- 3/4 cup tomato paste (6 oz.) ⓘ
- 1 3/4 cups ricotta cheese ⓘ
- 1 1/4 cups frozen chopped spinach, thawed and well drained ⓘ
- 1 cup shredded mozzarella cheese ⓘ
- 1 egg, slightly beaten ⓘ
- 2 Tbsp. grated Parmesan cheese ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
Instructions
- Cook lasagne noodles according to package directions; drain and lay flat on foil to cool.
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat.
- Add chopped onions; cook, stirring frequently, until tender.
- Add stewed tomatoes and tomato paste to the skillet.
- Bring to a boil, then reduce heat and simmer for 5 minutes, stirring to break up tomatoes.
- In a mixing bowl, combine ricotta cheese, thawed chopped spinach, egg, grated Parmesan cheese, salt, and pepper.
- Spread a layer of the tomato sauce on the bottom of a baking dish.
- Lay a lasagne noodle flat, spread with the ricotta mixture, then roll up.
- Place rolled lasagne seam-side down in the baking dish.
- Repeat with remaining noodles and filling.
- Top the roll-ups with remaining tomato sauce and shredded mozzarella cheese.
- Bake uncovered in the preheated oven for about 20 minutes, until cheese is bubbly and golden.
- Serve hot, garnished with additional Parmesan if desired.
