Nancy'S Mexican Cornbread

Ingredients

  • 2 eggs
  • 2/3 c. vegetable oil
  • 1 1/2 c. self-rising cornmeal
  • 1 c. creamed corn
  • 3 Tbsp. chopped onion
  • 2 Tbsp. chopped hot pepper
  • 2 Tbsp. chopped green pepper
  • 1 c. sour cream
  • 1 c. shredded Cheddar cheese

Instructions

  1. Preheat oven to 350°.
  2. Mix ingredients in order of recipe. Use 9 x 13 Pyrex dish sprayed with Pam.
  3. Pour mixture in pan. Bake 35 minutes until cornbread is light brown.
