Ingredients

  • 4 cups sugar
  • 1 cup white corn syrup
  • 3/4 cup water
  • 3 egg whites
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions

  1. Cook sugar, corn syrup, and water over low heat until the sugar is dissolved.
  2. Increase heat and cook without stirring until the mixture reaches 255°F (hard-ball stage).
  3. Remove from heat and, beating constantly, pour in a fine stream into the stiffly beaten egg whites.
  4. Continue beating until the mixture holds its shape and loses its gloss.
  5. Add vanilla and chopped pecans to the mixture.
  6. Drop spoonfuls quickly from the tip of a teaspoon onto waxed paper to set.
