Ingredients

  • 3 strips bacon
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 2 cans stewed tomatoes
  • 1 can water
  • salt and pepper to taste
  • 3/4 cup grits
  • 1 cup chopped ham

Instructions

  1. Cook the bacon in a skillet until crispy, then remove and drain on paper towels.
  2. Crumble or chop the cooked bacon and set aside.
  3. In the bacon drippings, sauté the chopped onion and green pepper until tender.
  4. Add the stewed tomatoes and water to the skillet, bringing to a simmer.
  5. Stir in salt and pepper to taste.
  6. Gradually add the grits, stirring constantly to prevent lumps.
  7. Cook the mixture until the grits are thick and tender, about 20-25 minutes.
  8. Add the chopped ham and cooked bacon into the grits, stirring to combine.
  9. Serve hot, garnished with additional bacon or ham if desired.
