Ingredients

  • 2 lb. top round beef steak
  • 1 cup Italian seasoned bread crumbs
  • 1/4 cup Italian seasoned bread crumbs (reserved)
  • 1/2 cup Provolone cheese, shredded
  • 1/2 cup pine nuts, chopped
  • 2 cloves garlic, minced
  • 1 can Italian-flavored stewed tomatoes
  • 3 Tbsp. olive oil
  • 2 Tbsp. lemon juice

Instructions

  1. Pound the beef steak until flattened.
  2. Mix bread crumbs, Provolone cheese, pine nuts, and garlic in a bowl.
  3. Spread the mixture evenly over half of the flattened steak.
  4. Fold the other half of the steak over the bread crumb mixture.
  5. Place the rolled steak in a nonstick baking dish.
  6. Top with Italian-flavored stewed tomatoes.
  7. Sprinkle grated Parmesan cheese and reserved bread crumbs over the top.
  8. Drizzle with olive oil and lemon juice.
  9. Bake at 375°F (190°C) for 30 to 35 minutes.
