Ingredients

  • 1 1/2 lb. yellow squash
  • 1/2 c. butter
  • 1/2 c. chopped onion
  • 1/4 c. bell pepper
  • 1/2 c. mayonnaise
  • 1/2 c. grated Cheddar cheese
  • 1 c. chopped water chestnuts
  • 1 egg
  • 1 Tbsp. sugar
  • Ritz cracker crumbs

Instructions

  1. Cook sliced yellow squash until fork-tender; drain.
  2. Sauté chopped onion and bell pepper in butter until softened.
  3. In a mixing bowl, combine cooked squash, sautéed vegetables, mayonnaise, grated Cheddar cheese, chopped water chestnuts, egg, and sugar.
  4. Pour the mixture into a greased 1 1/2-quart casserole dish.
  5. Top with Ritz cracker crumbs.
  6. Bake at 350°F (175°C) for 30 minutes until golden and bubbly.
