Chewy, sweet no-bake date balls with crunchy Rice Krispies and vanilla, perfect for a quick snack or healthy treat, suitable for all ages and occasions.

Ingredients

  • 1 1/2 cups chopped dates
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups Rice Krispies
  • 1 cup sugar
  • 1/2 cup butter or margarine

Instructions

  1. Melt butter or margarine over low heat.
  2. Add chopped dates and beaten eggs; cook for 12 to 15 minutes over low heat.
  3. Add sugar and cook for an additional 12 to 15 minutes.
  4. Remove from heat and stir in Rice Krispies and vanilla.
  5. Allow mixture to cool until manageable.
  6. Form small balls from the mixture and roll in coconut.
  7. Let the date balls cool before serving.
