Ingredients

  • 4 medium zucchini, sliced
  • 2 ripe tomatoes, cut into wedges
  • 1/2 cup frozen chopped onion
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • pinch of oregano
  • 1 tablespoon tomato juice

Instructions

  1. Place all the ingredients in a medium covered saucepan.
  2. Cook for 5 minutes, stirring occasionally.
  3. Uncover; cook for 10 minutes longer.
  4. Watch carefully to be sure liquid has not evaporated.
  5. Add liquid if necessary, 1 tablespoon at a time.
