Ingredients

  • 2 medium zucchini
  • 2 Tbsp lo-cal mayonnaise
  • 2 Tbsp minced green onions
  • 1 Tbsp Dijon mustard
  • 1/4 tsp dried marjoram
  • 1/4 tsp dried thyme
  • 3/4 cup soft breadcrumbs
  • 1/2 tsp paprika
  • 1 Tbsp oleo

Instructions

  1. Place zucchini slices on a baking sheet coated with cooking spray.
  2. Combine mayonnaise, minced green onions, Dijon mustard, dried marjoram, and dried thyme; stir well.
  3. Spread 1/2 teaspoon mayonnaise mixture over each zucchini slice.
  4. Combine breadcrumbs, paprika, and melted oleo; stir well.
  5. Sprinkle evenly over zucchini slices.
  6. Bake at 450°F for 5 minutes or until breadcrumbs are browned.
  7. Serve warm.
