Ingredients

  • 1 cup sugar
  • 2 egg whites
  • 3 tablespoons water
  • pinch of salt
  • 1/2 teaspoon cream of tartar
  • 1/2 cup Karo

Instructions

  1. Put all ingredients in the top of a double boiler and mix some before you put over boiling water to cook.
  2. Cook in a double boiler for approximately seven minutes or until the frosting holds a peak on the beaters or in the pan.
  3. Beat with a mixer all the time the frosting is cooking.
  4. Remove from heat and continue to beat for approximately one minute.
  5. Add vanilla if you haven't added it before.

Tips & Substitutions

For optimal results, ensure your mixing bowl and beaters are completely clean and free of grease, as this can affect egg whites' ability to whip. If you need an alternative to Karo, consider using light corn syrup or a homemade simple syrup. If you prefer a sweeter frosting, you can add an extra tablespoon of sugar. Remember to constantly beat the mixture while cooking for the best texture.

Serving Suggestions

This frosting is versatile and works well on cakes, cupcakes, or cookies. It pairs beautifully with Grandma June'S Banana Bread(Now Known As 'Crossover Banana Bread') for a delightful dessert. Consider topping with sprinkles or toasted nuts for added texture. Serve it alongside a cup of tea or coffee for a perfect afternoon treat.

Storage & Reheating

Store any leftover frosting in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm it in a double boiler or microwave in short bursts, stirring frequently until smooth. Keep in mind that the consistency may change slightly after refrigeration, so re-whipping may be necessary to restore its fluffiness.

Frequently Asked Questions

Can I use whole eggs instead of just egg whites?

Using whole eggs will change the texture and consistency of the frosting, making it denser and less stable. It's best to stick with just egg whites for the light and fluffy texture this recipe aims for.

What if my frosting doesn't hold peaks?

If your frosting isn't holding peaks after the cooking time, it may need more beating or additional cooking time. Ensure that the water in the double boiler is actively simmering, and continue to beat until it reaches the desired consistency.

Is it possible to flavor this frosting?

Absolutely! You can add vanilla extract, almond extract, or citrus zest for flavor. Adding a few drops of food coloring can also give it a fun twist. Just be sure to add flavors after removing it from heat for the best results.
