No-Pot Tomatoes

A simple, smoky grilled tomato and onion dish flavored with herbs, perfect for a quick, no-pot meal to enjoy with grilled meats or as a flavorful side.

Ingredients

  • 1 tomato
  • 1/2 onion
  • 1/2 tsp. olive oil
  • pinch of basil
  • pinch of tarragon

Instructions

  1. Wash, core, and cut each tomato into 8 chunks.
  2. Peel the onions and chop them roughly; add to the tomatoes.
  3. Add butter or oil, salt, pepper, and herbs (basil, tarragon, oregano).
  4. Wrap the mixture in foil and seal the edges well, possibly in 2 layers.
  5. Tuck the foil package down in the coals or place it on the grill.
  6. Cook for 15 to 30 minutes until the onions are tender, depending on the heat.
  7. Serve with grilled hamburgers, steak, or chicken for an easy no-pot supper.
